The Wise up on Waste application is a waste tracker designed to help you identify when and where you are generating your most waste. It helps you to understand the volume of waste that is spoilage (unusable stock) versus preparation (generated as part of the cooking process) or customer plate waste (returned on plate from guests).
You are able to audit your waste by day part – breakfast, lunch and dinner service. The data inputted by you generates an average percentage breakdown of your waste streams and indicates how much waste you are generating per day, per day-part and per cover.
From this we are able to indicate how much waste you need to reduce by to achieve a 20% reduction and how much that 20% reduction could save your business per month.
